Chocolate Coco Peanut Butter Dip | Superfood Style

Today I whipped up s’more of my Chocolate Coco Peanut Butter dip in my blender! This time I added cacao nibs to this yummy superfood recipe.  Feel free to increase the amounts of your favorite ingredients in this raw and fiber-ful dish.

This recipe has a long shelf life when stored in an airtight container, so it won’t be going bad anytime soon. This dip is great paired with fresh fruit, so delish on crackers & sandwiches, and a great healthy frosting on cakes & cupcakes.

Basically: it’s my version of healthy Nutella!  I hope you guys enjoy it!

Ingredients:

2 tbsp coconut oil
2 tbsp Navitas Naturals raw cacao powder
2 tbsp raw peanut butter
2 tbsp flax seeds
1 tbsp Splenda brown sugar
cacao nibs (also optional)

Blend all ingredients with pulse mode until desired consistency.

Tonight’s Truffled Quiche

It is an understatement to say that I love truffle oil!  So tonight I decided to make a truffled quiche.  It really is one of the quickest & easiest things to make, and doesn’t require many ingredients.  All you need are:

a few handfuls of greens

1.5 cups milk

3/4 cup grated cheddar cheese

parmesan

1 tbsp white truffle oil

oregano

minced garlic

fresh ground pepper

sea salt

Preheat oven to 350 degrees. IMG_6405 Add the greens, eggs, milk, grated cheese into a baking dish.  IMG_6426Whisk everything together.  IMG_6404Then mix in the truffle oil, few sprinkles of oregano, minced garlic, fresh ground pepper, & sea salt.  The sharp cheddar cheese I used is from Petaluma’s The Creamery Store Cheese & I used Napa Valley Wine Country Kitchens White Truffle Oil.

I like a lot of spices so I am not too light when adding the seasonings 🙂  IMG_6427 Then I place the lid on the dish and bake in the oven for 10-15 minutes.  I like to check if it is fully cooked by dipping a toothpick into the quiche.  If the toothpick is still a bit watery, it just needs to cook for a little while longer.  When fully cooked, it’s time to remove.  Then I top with parmesan! Enjoy! Happy Sunday!  XO ~Kelle

My Mango, Hot Sauce, & Himalayan Sea Salt Salt Recipe!

One of my favorite fruits is mango with hot sauce and Himalayan sea salt.  If I need to trim down quickly, it is my go to dessert!  Not only does mango taste uber delish, but it also helps to alkalize the bod, is good for skin, and boosts the immune system (plus many, many, more reasons :)).  The hot sauce also boosts metabolism
and the sea salt provides minerals to the bodayyyy!  🙂  Cayenne pepper is also a great substitute for the hot sauce. Growing up we always put salt on our fruit so it’s just something that has stuck with me 🙂  Enjoy!!  Wishing everyone a blessed weekend!! XO ~Kelle
